Healthy Lentil & Veg soup

I don't know about you guys, but I am finding the sudden weather change depressing almost. Especially seen as just over a week ago I was tanning myself in Marbella- and now I'm jumping over puddles and getting umbrellas caught in my hair!

After work last night I could think of nothing more that I wanted to do than relax and have a bit of me time.

I made a massive hearty lentil soup- it was so good! I made loads and have put 4 more portions in the freezer! :)


I don't have exact amounts on how much I used because I just kept adding and tasting as I went. But I will give you a list of the ingredients.

Basically I: 
•Boiled some water with 2 organic vegan vegetable stock cubes and salt and pepper.
•Added 2 big chopped carrots
•1 big white onion
•3 stalks of celery
•1 cup of green lentils
•1 cup of yellow split peas
•3 big garlic cloves
• Chopped tomatoes (or 1 tin of toms)
•Chilli powder
•Mixed herbs
•Another stock cube and more salt and pepper

I boiled it all up for 15 minutes whilst stirring, then left it to simmer for 40 minutes- tasting and adding seasoning as I went.



I had about 3 kettle full amounts of water to mine- and it made 5 good sized portions.

Egg pie again

You should all know by now just how much I love eggs and veg. So on Monday I prepped this lovely mix for breakfasts :)


•Tomato
•Onion
•Mushroom
•Spinach 
•Peppers
•Eggs


•Heat half a teaspoon of coconut oil in oven dish
•Spread melted oil around pan
•Throw in your chunky chopped veg
•Season as desired
•Pour on your whisked eggs
•Oven bake for 40 minutes on 180c

Serve immediately or microwave or enjoy cold :)



This goes really well with my home made baked beans (for recipe please see previous posts).

Healthy clean breakfasts

Yesterday for breakfast I was meant to have egg pie but ended up not being able to.
So I grabbed a juice from an amazingly cute local cafe.


Carrot, Apple and Lime juice! So good and tasty to wake up to!

I had a banana and a naked bar too. 

I am trying to avoid processed things- yes even naked bars- but they are clean so it's not too bad of a fail.


This morning for breakfast I had a banana, an apple and an apricot with lots of water :) yummy!

I have another banana and a naked bar for elevenses!

Quick & Easy Chilli con carne


Happy Tuesday all :)

Yesterday was a 500 day for me, so by the time I had got home I was starving.
Me and my housemate made a quick and simple chilli con carne for tea, it was just what I needed.

I love how many different vegetables you can put into a chilli- you can get so many nutrients from a quick and easy dish.


Instruction:
•Cook in a small amount of coconut oil
•1-2 thinly sliced garlic 
•Chopped onion, mushroom, tomato & peppers 
•Add portion of quorn mince
•(if using meat- brown the mince before adding veg)
•Add chilli powder, chilli flakes & cumin
•Mix in red kidney beans
•Add tinned toms/chopped toms/passata
•Stir in some spinach for the last 2 mins
•Season with salt and pepper
•Taste- add more spice/cumin if required

For the 'rice':
•Boil quinoa and bulgar wheat
•Add in peas & sweet corn in last 5 minutes

Dinner is served :)



Often when I have more time to make a chilli, I add in stock cubes & more vegetables: Brocolli, Chic Peas, Lentils & every other type of bean (full of beans!)... And I will slow cook it.

Veggy Egg

My breakfast yesterday was so good!

I love eggs!

And I love veg!


Cook some chopped tomato, mushroom, peppers and spinach in a little coconut oil

Season with some salt and pepper

Crack to eggs onto the mix and fry like regular eggs

Serve and enjoy :)

Detox time

I have 13 days until my beautiful friends wedding- and in those 13 days I will be following a strict detox and attempting the 5:2 diet!


The 5:2 diet is 5 days eating a normal healthy and clean diet intake, and 2 days fasting & having only 500 calories. 
This diet is meant to be amazing for weightloss. But has the worries of: is fasting healthy? Is it not starvation? Will you be weak?
I am going to give it a go and let you all know what I think- has anyone else done this diet? Do they do it regularly?

If you are going to attempt this diet then remember to eat healthily- eat 500 calories of clean food spread throughout the day- not one binge on junk food 500 calories. 


Let the detox BEGIN!
