Marbella salads

Hello from Marbella.
We had a hungover hen party group this morning after some fun last night.

We spent today on the beach, and I was so chuffed to find an amazing amount of healthy salad options on the menu at lunch time.

I opted for an amazing jam packed Niçoise salad- it was so good!



Lettuce, cucumber, beans, olives, artichokes, tomatoes, peppers, egg and tuna! 

A colourful plate FULL of nutrients!

If we go back here for lunch again I may try the hot goats cheese salad with honey and walnuts which two of the group had. It looked so good!

Healthy snacking



If I haven't prepped any of my naked balls (see previous post for recipe) then another item on my snacking list are these raw superfood balls.
They are sooooo yummy! & seriously nutritious!

Snacking can be clean and healthy just keep stocked up on home made clean snacks or naked bars, rude health bars, bounce balls, trek bars or 9 bars (9 bats is last on my list as they are not that clean).

Healthy option take out

During my manic packing stress last night my boyfriend got us take out.



This is Nando's Mediterranean salad with macho peas..... Sooooo yummy!
(Some halloumi may of found its way into the mix too- oooops)

Coffee fix!!

I have seriously cut back on my coffee intake- I used to drink it every day- a few times a day.

Not only that but I would have caramel lattes / vanilla lattes / regular milk / white sugar.

Not good!

This morning I was at the airport for 5.30 am and I needed that coffee fix. 

My standard option and what I ONLY drink now, was a soya flat white.
This is the lightest option for coffee.

I still have to have that 1 sugar in it though (I am trying to go without- honest), but I now have brown sugar not white. Really I should carry some of my healthy natural sugar with me- but I don't want to encourage myself to buy coffee.


Boarding time for me- lots of posts to come whilst I am away in Marbella... Keep on with the food picture tagging and sending and I will feature the best ones again in another post- you guys motivate & encourage me!

Home made pancake rolls!

This is absolutely perfect for me.
I have a serious addiction to spring rolls!!

You can fill these yummys with warm, cold or raw fillings. You can even fry or oven bake them! The list is endless!!


In this picture I have raw simple fillings of cucumber, spring onion and carrot with soya sauce.

I then had a warm filling of egg and pan fried veg- onion, mushroom and broccoli- like an egg fu yung. 

This is sooo amazing with a crabstick or prawn or salmon, with avocado, cucumber and onion!

Honestly, put anything in these- they are all yum!

Bean sprouts
Pak choi
Water chestnuts
Bamboo shoots
Peppers
Chicken
Tofu
Quorn

Anything and everything!

I got my rice paper from morrisons but anywhere sells it- you can even order it off amazon!
Instruction are on the packs- with mine I poured kettle water onto a plate (so just a thin layer) and lay the rice paper onto the plate on each side.
Then placed the wet rice paper onto a damp piece of kitchen roll/damp clean cloth and filled it with my fillings,
Folded it up/rolled it up,
And job done!

This is perfect for adults & kids and they are fun to make!!

Last day in work before HOLIDAY!

My day started pretty similar to how it started yesterday, (yes I worked bank holiday) clean & healthy.


I'm just going through the moves today- counting down the hours until I'm outta heeeere! ;) 


I hope you all had a lovely bank holiday- mine definitely involved too much food. But it was yummy & I enjoyed it.

Chilli Beef!

This is the PERFECT filling for spinach wraps or Lettuce leaves!
The other great thing about this recipe- it is perfect for kids too! Just season accordingly/skip on the chilli if needed :)

Ingredients:
Quorn Mince Meat (If you are a meat eater you can use lean beef mince/lean turkey mince)
Organic veggie stock cubes (Oxo cubes/Regular stock cubes)
Onion
Tomato
Mushroom
Peppers
Garlic
Fresh chilli/chilli flakes/chilli powder (or ALL of them like I do!!)
Coconut Oil

Directions:
Dice your onion, tomato, peppers, garlic and fresh chillies
After heating your coconut oil in a frying pan, add your diced veges and stir regularly
In another pan cook your mince of choice with a stock cube crushed over the top, with coconut oil
When your meat is cooked, add in your veges

Here, you can decide whether the texture is as you want it. When I am making this filling for spinach or lettuce wraps I like to leave it. But you could always add in some water or passatta/tomato puree

Season as you desire with chilli flakes/powder, salt and pepper & serve immediately into your wraps
Top with my home made quacamole or hummus to make it even better! ENJOY!




You don't have to use all of the veg listed, it works well with just the mince, garlic & chilli. Or can use different veg- beans works well with this!!

Spinach Wraps

As you all know- i LOVE carbs.

So in March when I was getting going with the health kick I really missed having a sandwich or a wrap at work for lunch, or some carbs with my tea. I had looked into how to make your own healthy tortilla wraps- but it seemed like too much effort (and i would probably not make them very well).

So, I came up with my own simple invention which did the job for me, and I have had good feedback from a few people who have made them also.

Ingredients:
Eggs
Spinach
Coconut Oil
Optional seasoning: chilli or garlic or pepper or salt

Directions:
Using a blender, blend your eggs and spinach (I would say about 1 small handful of spinach per egg)
Heat a small amount coconut oil in a frying pan (just to grease the pan)
Turn the heat to the lowest setting
Pour a tiny amount of mixture into the middle, and immediately tilt the pan to spread the mixture out into a very thin layer covering the whole pan (pour a very small amount as you can always add another small amount if it doesn't cover the whole pan- this does not work as well with a thick layer)
Cook gently, then flip and cook gently on the other side



That's it! There we have a spinach wrap.
Serve immediately, warm with my veggie chilli beef filling (post to follow) & quacamole
Or cold for your lunchbox with roasted veg/quinoa mix and hummus.

SoFit's chunky Quacamole!

Another quick and simple recipe perfect for adults & kids :)

Ingredients:
1 or 2 avocados
Tomatoes
Onion
Lime
Corriander or chilli or garlic (optional)
(you may also use salt and pepper)

Directions:
Cut your avacado/s in half and remove the stone,
use a teaspon to scoop out the avocado into a bowl
use a fork to half mash some avocado (to your desired texture)
Chunky dice your tomato and onion & mix into the avocado
Squeeze in half a lime
Season to your taste- (I like to add a smidgen of crushed garlic, a touch of chilli flakes and some chopped fresh corriander. Then lots of black pepper onto the top)


SERVE & ENJOY
This with the home made wedges from my previous post = heaven :)

Home Made Wedges!

I have a seeeeerious love for carbs. I LOVE potato wedges with dips.
Eating clean doesn't mean that this is a problem :)


SoFit's easy peasy simple & perfect for adults AND kids wedges:

Ingredients:

Salad/New Potatoes or Normal Potato or Sweet Potato or Carrots or Beetroot
Coconut oil
Rosemary or Garlic or Chilli or Mixed herbs or Basil or Paprika
(you can also use salt and pepper)

Directions:

Put a little coconut oil into  baking tray and warm/melt in the oven
Cut you wedge ingredient of choice into wedge shapes
Season your coconut oiled tray with spices/herbs of your choice
Pour on your wedges - shake - and season again

Bake in the oven for 25-35 minutes on 180c
Shaking twice during cooking time
(and season again if desired)


Serve immediately as a starter with home made hummus in previous post, or home made quacamole from my next post / or as a main with my home made garlic coleslaw from previous post.

Sunday Funday part 2

This Sunday is double date day- and that involves a whole lot of food!

We are just on the way to meet the other couple at Covent Garden, were going for a big lunch at a new restaurant called Shake Shack. I am not going to lie to you- it is a massive burger and fries restaurant (my boyfriend and the other guy involved are the biggest burger fans you could ever meet), and I am excited! 

Afterwards we are heading over to South Bank for a food festival. The boyfriend and I are regular attenders of the different food festivals they have along the Thames. Good food with a great backdrop- sounds good to me!

There will be alot of pictures to follow for you all!

Then we're off to see the show Limbo! Can't wait!
